Praline Pecan Meringue Ice Cream Sandwiches

This meringue cookie is light , slightly chewy, and exceptionally flavorful due to the use of dark brown sugar and the addition of pecans, My favorite ice cream for this cookie sandwiches are coffee . The mellow chocolate piping sauce made for theses cookies elevates it to an elegant dessert. I made mine 2 scope size each and they came out this big , next time I make them 1 Tablespoons each. I made 8 sandwiches they are absolutely delicious and yes I would make theses again!!!                                 

                  All I CAN SAY IS WOW!!!
Absolutely amazing. ....
 Yummy! put the ice cream in the middle and also melted some chocolate for the tops...
 Out of the oven and cooling. ...
 Trays are ready to go in the oven at 350F. for 10 to 15 minutes, until slightly crakers...
 Folding the roasted Pecan. ...
 The Meringue is ready.....
  Now whisked to medium - high until thick and plae..
Whisked on medium-low until sugar is mixed...
 4 large egg whites (120 grams) and 300 grams of  dark brown sugar is ready to whisk.
300 grams roasted pecans and chopped. ..
 Weighed the dark brown sugar. .....
 Pecans are Roasted and out of oven. ...
 Egg whites are weighted and room temperature. 
All I can say is wow!!!
