Jewish Rye Bread

This is the Jewish  Rye Bread and I made  a  lot of changes.
Absolutely Delicious!😉🍷🍞

I have trimmed (The Jewish Rye Bread ) from (The bread bible) Rose Levy Beranbaum’s directions significantly. The thing is, she gives great and extensively detailed directions, but my thing is, I like to pare change thing a little, especially when it comes to bread. I honestly believe that once you are certain your yeast is working, it’s harder to mess up a loaf of bread than it is to make it delicious. Follow the rising times and size pointers, see that it’s kneaded well and baked at the right temperature and you can have a little bit of New York City in your kitchen. Set aside 8 hours for this / I all so didn't add any seeds.

Now you can't get it any better than this!
Here is what it looks like inside of the bread...
Out of the oven and look at the high Loaf. ..
Second rise press down gentle, kneaded for a couple of minutes and went for second rise for 1 1 / 2 hours...
First rise for 2 hours.....
Added flour mix on top of sponge and, rise for 4 hours...
 Mixed the sponge and covered and set aside...
Would I made this bread again yes.....

Semolina & Olive Oil Bread with Sesame Seeds

The original recipe required sesame seeds exclusively, much more than I had on hand in fact. So I made my own adjustments in that department, instead using a combo of semolina, bread flour, and unbleached all-purpose flour. I wasn't altogether sure this would work well since semolina is very high gluten flour and I didn't have a lot of it.
The olive oil adds a subtle aroma that's uniquely appealing, and it also obviously lends something special to the bread's beautifully textured crumb. As for the sesame seeds, I made the decision to add them on my own, but as you can see most or all of them fell off when I turned the loaves over to remove them from the pans.
That was entirely my own fault: I should have wet the tops of the unbaked loaves with water, or brushed them with an egg wash, and then gently patted down the seeds to help them adhere. The bread was just as good, though, despite those wayward sesames.

 dough has fully raised double ......
 first rise dough is in container with hot water steam in microwave......
 added the wet liquids to the flour mixture and mixed until smooth....
 have ready the oil/warm water/yeast.....
 mixing all of the dry ingredients for 7 minutes....

White Chocolate Bread

This is using the soft White Sandwich Loaf recipe from  (THE BREAD BIBLE) as the base . Adding little cubes of white chocolate to the dough results in small lacy holes lined with sweet coating of chocolate.

Ready to bake the bread p.s. next time I will use a 9"by 5" pan...
put in pan loaf and ready for second rise in microwave with hot water steam ..
Rolling the dough and selling the ends of the dough and trunk the ends ....
Covering with second piece of dough....
knead a little to mix the chocolate & shape a little & wrap it/ let rest for 20 minutes. ....
 
Spreading the small chucks of white chocolate and roll it up...
Rolling out all of the dough & cut out one smaller part for the cover & chill it . ..
Ready to press gently and roll out...
Put back in container and chill for 30 minutes. ..
Giving it a business letter fold.....
Rolling it out.....
Dough has double it size ......
dough is in container & in the microwave with hot water steam for first rise..
 Dough is ready to be put in the container for first rise........
Sprinkle on the salt and mix.....
Mixing the final dough, cover and let rest for 20 minutes......
 
The sponge is breaking throw the blanket....
The soft butter and the white chocolate is ready...
Blanket is on for 2 1/2 hours......
Starter sponge is ready to put the blanket on...
